While a lot of Indian recipes are inherently vegan like chana masala, bhindi, and aloo matar, I like to try out to the recipes that are inherently not. One of the biggest things I miss out on being an Indian vegan is, of course, paneer. Malai Kofta is also pretty high on the list of things that I miss as a vegan, so this section focuses on the things people think that vegans are deprived of.       <image:caption>While all my recipes are pretty healthy, these are specifically all fresh and low-carb including lots of soups &amp; salads. I’ll be honest, soups aren’t my favorite and salads definitely get a bad rep, but I promise these recipes are healthy AND tasty. Contrary to popular belief, salads can actually be unhealthy, for example, if your salad has more dressing than greens it’s a little counterproductive. Same with soups, just because broccoli cheddar is a type of soup doesn’t mean it’s healthy (even with vegan ingredients). With these recipes, I really tried to find that balance in making the recipes tasty and FUN but also kept them healthy and low-carb.</image:caption>

While a lot of Indian recipes are inherently vegan like chana masala, bhindi, and aloo matar, I like to try out to the recipes that are inherently not. One of the biggest things I miss out on being an Indian vegan is, of course, paneer. Malai Kofta is also pretty high on the list of things that I miss as a vegan, so this section focuses on the things people think that vegans are deprived of. I’ll be honest, soups aren’t my favorite and salads definitely get a bad rep, but I promise these recipes are healthy AND tasty. Contrary to popular belief, salads can actually be unhealthy, for example, if your salad has more dressing than greens it’s a little counterproductive. Same with soups, just because broccoli cheddar is a type of soup doesn’t mean it’s healthy (even with vegan ingredients). With these recipes, I really tried to find that balance in making the recipes tasty and FUN but also kept them healthy and low-carb.</image:caption>
